Definition
A semi-hard to hard cow's milk cheese originating from the Asiago plateau in the Veneto region of northeastern Italy, known for its nutty, slightly sweet flavor that intensifies with age.
Named after the town of Asiago, it comes in two main varieties: Asiago Pressato (fresh, milder) and Asiago d'Allevo (aged, sharper).
